Choosing your rack

KELOO's GN racks run 6 x 1/1, 15 x 1/1 and a double-column 15 x 2 model. Fifteen pans in a single column is the standard full-height rack and the one most production kitchens use. Measure your doorways and your walk-in entrance before ordering - at 1735mm the rack itself will pass through a standard door, but a loaded rack needs clearance above the top pan as well.

Good to know

Pan depth determines how many levels you can actually use: fifteen 65mm pans fit comfortably, fifteen 150mm pans will not. If you mostly run deep pans, count your usable levels rather than the rack's rated capacity. Load heavy pans low and lighter pans high - a full-height rack loaded top-heavy is unstable on a threshold or a ramp.
