Choosing your size

Size on counter space first and product range second. 660mm suits a kiosk or a tight corner; 900mm is the standard cafe buy and holds a full day's cake selection; 1200mm is worth it when display itself is doing the selling. If you are showing sandwiches, sushi or deli as well as cake, the square-glass GN-1200RT is the better shape.

Good to know

Countertop displays hold chilled product rather than pulling it down from room temperature - chill cakes first, then load. Leave a clear air gap at the back for the vents and keep the unit out of direct sun and away from ovens and heat lamps.
