Three dishes, one counter unit. The BM-1/3 divides the well into three 1/3 gastronorm pans, which is what turns a hot counter from a single dish into an actual choice - a curry, a rice and a vegetable side, all held separately at serving temperature.

Wet well heating surrounds the pans with heated water rather than heating them directly, so all three hold for hours without catching or drying at the edges.

Choosing your configuration

This range runs 1 x 1/1 pan (BM-1/1), 2 x 1/2 pans (BM-1/2) and 3 x 1/3 pans (BM-1/3) - all 150mm deep and on roughly the same footprint. Choose by how many dishes you serve, not by volume: total well capacity is similar across all three. Three pans gives customers the most choice, but each pan empties faster - if one dish outsells the others heavily, you may be better with the two-pan model and a larger pan for your main line.

Good to know

Always fill the well with water before switching on - running a wet well dry damages the element and is the most common cause of failure. This is holding equipment, not cooking equipment: bring food up to temperature first, then transfer it in. UK food safety guidance is to hold hot food at 63°C or above; check with a probe rather than relying on the dial. Gastronorm pans and lids are sold separately.
