One full-size pan, held hot and even. A wet well bain marie surrounds the pan with heated water rather than heating it directly, which is why sauces, curries and gravies hold for hours without catching, drying or forming a skin.
The BM-1/1 takes a single 1/1 gastronorm pan at 150mm deep - the standard full-size pan - on a 540mm countertop footprint.

Choosing your configuration
This range runs 1 x 1/1 pan (BM-1/1), 2 x 1/2 pans (BM-1/2) and 3 x 1/3 pans (BM-1/3) - all 150mm deep and all on roughly the same footprint. Choose by how many dishes you serve, not by volume: the total well capacity is similar across all three. One full-size pan holds the most of a single dish; three 1/3 pans let you offer three.
Good to know
Always fill the well with water before switching on - running a wet well dry damages the element and is the most common cause of failure. This is holding equipment, not cooking equipment: bring food up to temperature first, then transfer it in. UK food safety guidance is to hold hot food at 63°C or above; check with a probe rather than relying on the dial. Gastronorm pans and lids are sold separately.
