Choosing your width

This three-tier gantry range runs 900mm, 1200mm, 1500mm and 1800mm - all 300mm deep and 975mm high. Lamp count scales with width, so heat coverage stays even whichever size you pick. Match the width to your pass: as a rule, size it to the full length of the surface it sits over rather than the number of plates, so you are not left with cold spots at either end. If you need less holding capacity, the same widths are available as two-tier gantries at 650mm high.

Good to know

Quartz lamp gantries hold food that is already at temperature - they are holding equipment, not cooking or reheating equipment. Bring food up to temperature first, then hold it here. Keep an eye on holding times for food safety, and expect to replace lamps periodically as consumables.
