Good to know

Back bar coolers are designed to hold drinks at service temperature, not to pull warm stock down quickly - load in the morning for the evening, not ten minutes before opening. Leave a clear air gap at the sides and back for the vents; boxing one into a tight cabinet run is the usual cause of a unit that never quite gets cold on a busy Saturday.
