Choosing your grill
This range runs the 305mm EG-811A, the 425mm EG-811EA and the 580mm fully grooved EG-813. Ribbed top with a flat base is the best all-round sandwich configuration - it marks the top without striping the bottom. Fully grooved (EG-813) is the choice if you are grilling meat and vegetables more than bread. On width: 305mm handles a steady café trade, 425mm doubles your throughput at peak, 580mm is for volume sites.
Good to know
Wipe the plates down while they are still warm, with a scraper and a damp cloth rather than an abrasive - the non-stick coating on grill plates is the part that wears first, and abrasive cleaning is what shortens its life. Empty the drip tray daily. Allow the grill to come fully up to temperature before the first order; a cold plate will not mark the bread.
