Choosing your size
This range runs a 220mm blade (HBS-8) and a 250mm blade (HBS-10), both with the same 0-10mm thickness range and the same 0.32kW motor. Blade diameter sets the maximum size of product you can slice, not how fast you slice it - so choose on the largest joint or cheese you handle. If you regularly hit the limit of a smaller slicer, the 250mm is the model that removes the problem; if you only slice standard deli meats, the HBS-8 will do the same job in less bench space.
Good to know
A slicer is one of the most dangerous pieces of kit in a commercial kitchen. Only trained staff should operate or clean it, always with the blade guard in place and the machine isolated before stripping down for cleaning - and UK health and safety rules place restrictions on young workers using dangerous machinery, so check your obligations before putting anyone under 18 on the slicer. Keep the blade sharp: a dull blade tears product, needs more force and is significantly more likely to cause an injury.
