Char lines sell the burger before anyone tastes it. A ribbed plate does two jobs a flat one cannot: it marks the product, and it lifts it out of its own fat so meat sears instead of frying. The EG-821 gives you that on a 550mm countertop unit.

Choosing your griddle
This range runs 550mm and 730mm widths, in smooth, ribbed and half-and-half plates. Ribbed is a specialist plate - excellent for marked proteins, but eggs, pancakes and small items will not work on it. If this is your only griddle, look at the smooth EG-818 or the half smooth, half ribbed EG-822 instead. If you already run a flat plate and want to add char marks, the EG-821 is the right second unit.
Good to know
At 3kW this griddle sits right at the limit of a standard 13A socket - a dedicated circuit is recommended, particularly if it shares a bench with other equipment. Ribbed plates need a wire brush rather than a scraper: work along the grooves while the plate is still warm, and empty the grease drawer daily. Fat left in the ribs is the main cause of flare-up and off flavours.
